Quite simply, sheet rope is a piece of "rope" made from a ripped up sheet or other fabric, as the name would suggest. I mean, it is no more complex than a leather thong, but it's cheap, readily accessible and it will keep you tidy and out of trouble should things get sloppy. In light of the aforementioned, it makes sense to have a number of sheet ropes handy at all times.
Well, it's easy to make sheet rope in Project Zomboid: a couple of sheets or an old garment will do the trick, but be warned that you'll end up without the object in question when producing sheet rope. Sheets aren't hard to find, but you can easily obtain other weird pieces of clothing just by ransacking homes or stealing them off of zombies. Really, the only salient detail is that the clothes in question are made out of cotton, rather than denim or leather. Those fabrics would obviously be ill-suited for use in sheet rope.
To create sheet rope from any item, right-click it in your inventory and select the "Craft Sheet Rope" option that appears. Honestly, this really isn't that challenging. In fact, you can make all the possible clothing items a zombie is wearing into sheet rope in the blink of an eye by triggering this option in its inventory. That's useful when you're just trying to stockpile the item as fast as possible. Well done!
Lastly, I want to ingrain in your minds the value of having an extra sheet at all times. Turn old clothes into sheet rope and never actually get rid of them; this way, the zombies won't be able to distinguish the sheets you cover your windows with. Voila, a free pro tip for you.

With all these in your inventory, approach a window from where you want to make an exit, right-click on it, and then click on the "Add Escape Rope" option that shows up. Now, clicking the "E" button makes your character drop down to the ground level from then onwards by using a sheet rope. Unless you chose the "Weak" attribute for your survivor when you created her, you can enter through the ropes, too. Isn't that just great?
This is particularly useful in that, as anyone can observe, zombies are not fit to climb sheet rope. The only sure way to ensure that zombies cannot access where your refuge is will be to take away all the other means that can lead the zombies to the floor where you have built it up, such as stairs. In case a horde spots you going up one side of your refuge, it is also useful to have many of these escape ropes strategically positioned about your base.
Another option is sheet rope, which is good to make log stacks easier to carry and store for extended time, to say the least. This is incredibly useless compared to the freedom to arbitrarily insert your own unique entrances and escape routes.
