You will need to wait for three full in-game days to pass, and then sleep on the night of the third day. Upon waking, a text prompt will confirm your transformation into a vampire. Vampires are creatures of the night, and exposure to sunlight will cause them to burn and take damage every second the sun is visible. This relegates your activities to the nighttime hours.
