The first thing to know about where to find Diallos after leaving the volcano mansion in Elden Ring is that you will first meet this NPC in Roundtable Hold if you accept his quest. Here he will ask you to find Lanya, his missing partner.

To find Lanya, you will have to go to the Liurnia de los Lagos region and go to the Raya Lucaria Academy. Diallos will beat you to the location, because you'll hear him screaming for his dead servant. You will then meet him again at the Roundtable Hold, and he will inform you that he will be at Mount Gelmir, at Volcano Manor. In this location you will have to find the key to the drawing room with the quest from Lady Tanith.

Diallos will be in the Drawing Room, and after your second kill, he will tell you that he is not worthy of belonging to Volcano Manor and wants to find out who killed his servant Lanya.
