Well, you should always restart your PC before attempting any workaround. Though not that often but a restart can often solve such problems. You may want to try restarting your PS5 and then start the game again to see if that helps.
Get to Your Saved Data and Game/App Preferences
This fix requires deleting the saved settings of the game from the console storage. In the PS5 settings menu, find Saved Data & Game/App Settings further down in the menu. Select that menu, then select Saved Data (PS5). Then, select Update or Delete from Console Storage. From the list of games available, select Grand Theft Auto 5 or Grand Theft Auto Online, highlight it, then click the Edit option. Ensure the GTA 5 Profile option disappears from the Edit menu.
How to Link Accounts
If your profile isn't appearing in-game, then your PSN account probably isn't linked to your Rockstar Social Club account. For confirmation, go into the social club's account and check if your PSN is linked. If not, then link it and launch the game afterward.
Leaving and Entering
As an added measure, try logging out of your PSN account on your console and then sign in again to see if the issue persists. For that, open the Settings menu of PS5 and head to Users and Accounts. Next, press the Other tab. Click on "Sign-Out" here. Remember to log in using your account credentials after signing out. Start the game now and check if the issue persists.
Check the Current Status of PSN Service
This could be an issue with the service being temporarily down when trying to access the game on PSN. You can check the official PSN Service Status page for this. Data Reconstruction
Apply this solution by starting the PS5 in Safe Mode. How? Go ahead and power off your PS5. From here, hold down the power button until you hear two beeps.
