So, the first time you encounter Catherina is in Metaphor ReFantazio while going through the dungeon of Grand Trad's Regalith Grand Cathedral in hopes of avoiding June's Day of Calamity. You won't know if she's around or available because that's what would have been the case when you go onto your Follower tab in-game, which lets you fast travel to people immediately available for Bond talks.

You won't have to deal with accidentally running across her anymore when you are on the road. As with the other Follower Bond scenes, you can get night time notifications saying she's ready to talk and giving you an opportunity to go see her in a real world city. You would need to have a maxed Rank 5 Tolerance in Rank 6 to maintain such a partnership. For Martial Artist Archetype, you might keep in mind that Catherina's availability at night could be what you're going to need.
