This ingredient can only be found in one of the later biomes, for which you will need a good amount of Dreamlight. You will be able to get the Dreamlight by completing tasks in the valley and helping the residents to complete their quests.

Eggplants will be in The Frosted Heights, north of the Forest of Valor biome. Frosted Heights is worth 10,000 Dreamlight to unlock. While unlocking the Forest of Valor will cost around 4,000 Dreamlight.

Already in The Frosted Heights, you will have to save the Star Coins that are needed to open Goofy's Stall in the area and when you manage to unlock the stall you will have to update it, at least once before carting with the Eggplant Seeds or directly the eggplants.

Eggplants take 3 hours to fully grow and during this time you will have to return several times.

If you manage to unlock the Wall-E in time, you will be able to continue the quest line to unlock the garden, which will allow you to get eggplants from Wall-E's garden from time to time.
